Chicken thighs, rub with cumin, coriander, ancho chili powder, oregano, salt, pepper.
Make the marinade in food processor or blender: 1/4 C olive oil, cane of chipotles with adobo sauce, fresh garlic, lime juice and a little water to thin it out (it was real thick).
Put chicken in the marinade overnight.
I added a little ole El Paso chipotle chicken seasoning the next day after removing from the marinade.
Put on the grill at 275. Turn after an hour. 165 internal. Took about 2.5 to 3 hrs. Rest for 5-10 min. Slice and dice serve with usual suspects on tortillas. Use the same sour cream sauce from the carnitas below.
