This is basically straight from Malcom Reed’s recipe on How to Bbq right.
Boston butt - score it all over, real deep, rub with salt pepper and garlic powder. Marinate overnight in a bag of:
Orange juice, chipotle peppers with adobo sauce, quartered limes and oranges and onion.
Next day add more rub: cumin, chipotle powder, ancho chili powder, cinnamon. You can cheat with one of those ole El Paso carnitas packets if ur a lazy focker.
Put on smoker at 275 for about 4 hrs.
Remove from grill and place meat in a big assed foil pan for braising. Add to pan : 2:1 ratio of tomato juice to OJ, more onion, garlic cloves, bay leaves, fresh chipotle or pablanos , more limes, adobo whatever. Cover with foil back on the grill same temp until 200 internal. Let rest for 30-60 min and pull it.
Serve with tortillas and taco toppings of choice. I went with cotija cheese, cilantro, corn salsa, rotel, Serrano, lime. If want it to be really good add this sauce:
2:1 sour cream to mayonnaise
Lime juice
Some adobo sauce with 1 cut up chipotle pepper
Salt, pepper, cumin to taste.
