Guiness Beef Stew

Ingredients: (Note: this stew has a LOT of flavor so best not to overdue any of the ingredients).

2-21/2 lbs Stew meat (I buy this at Costco & freeze what I don't use)
1/2 cup flour
1 Tbsp seasoning salt
1 tsp ground pepper
2 Tbsp olive oil
1 Tbsp butter (for color)
pinch cayenne (optional)

1/4 cup Worcester. sauce
2 cups (or 1 bottle) Guinness Stout
2 heaping tsp Beef demi-glace*
1 large onion diced
3-4 medium-large red potatoes
4 carrots
1 stalk celery
2 cloves garlic minced
2 tsp thyme leaves
2 Tbsp tomato paste
2 bay leaves


1. Put flour, seasoning salt, pepper & small pinch cayenne(optional) in baggie, add beef & shake. Heat oil /butter in skillet and brown on all sides (in batches) 3-5 min. Remove with slotted spoon or tongs & put in crock-pot.
2. In same skillet add diced onion. Cook 2 min & add to beef in crock-pot.
3. In skillet, add Worcester sauce, Guinness, garlic, tomato paste and demi-glace.* Wisk to blend/disolve then add to crock-pot.
4. Add potatoes, carrots, & celery chopped to size you prefer for stew.
5. Add thyme & bay leaves
6. Add water to just below top of contents
7. Cook on low 7-8 hours or high 4-5 hours
8. Remove bay leaves & serve with crusty french bread

* If your store does not have beef demi-glace you can substitute Swanson Flavor boost or Better Than Bullion in Beef. I get the demi-glace at Fresh Market or Whole Foods (It ain't cheap but adds great flavor).
